BEETROOT HUMMUS
- 2 cups zucchini,peeled
- 1 cup beetroot, chopped
- 1/3 cup almonds, soaked overnight
- 1/3 cup tahini
- 1/3 cup lemon juice
- 1 Tbsp balsamic
- 1 fresh clove garlic
- 2 tsps Native Collagen Booster
- 1 tsp cumin
- 1 tsp salt
METHOD
Place all ingredients in a high speed blender and blend till smooth.
Presentation
LAYERING INGREDIENTS
- 250gm hummus
- 1 cucumber finely diced
- 1/2 cup pomegranate arils
- 1 tablespoon red onion, finely diced
- 1/4 cup olives pitted and sliced
- 2 tablespoons fresh herbs, finely chopped
- 1 lemon zest Drizzle of olive oil
- Salt and pepper to taste
- Crackers to serve
METHOD
Spread the beetroot hummus on a serving platter.
Layer with cucumber, olives red onion, pomegranate and herbs.
Drizzle with olive oil.
Season with salt and pepper and enjoy with crackers.
